  1. Drain and rinse the canned chickpeas using a colander or sieve, set aside.
  2. Wash your red bell pepper and slice into small cubes, peel and finely dice your red onion.
  3. Combine the chickpeas, red bell pepper and onion in a salad bowl, cut a lemon in half and juice it, pour over the mix.
  4. Drizzle atop some olive oil, sprinkle some salt and pepper to your taste, let sit for 5 minutes to infuse.
  5. Serve and enjoy with your favourite mains or as a wrap filler, enjoy!
