Back in the ancient times when I used to eat meat, arroz de tomate was a great way of eating rice.

- 1 Cup Basmati Rice
- 2 Roma tomatoes
- 1 Small Sweet pepper
- 1 Medium Onion
- 2 Cups Water
- 2 Bay leaves
- 1 Tbsp Vegetable oil
- 1 Tbsp Tomato Paste
- Salt
- Black Pepper
- Dice the onion and chop the tomato and pepper up into small pieces.
- Heat oil in a saucepan, and add in the onion & bayleaf, cooking until the onion softens slightly.
- Add bell pepper and 2-3 minutes, with a squeeze of tomato paste and a splash of water to combine, on a medium heat.
- Add rice in, along with the tomato, fold in and cook for a minute or two to combine all flavours.
- Add in stock water, salt and pepper, bring to a boil, lower to medium-low, cover and simmer for 10-15 minutes.
- Once rice is cooked, allow to rest for 10 minutes before serving to solidify - Serve and enjoy with your favourites!
