Ingredients

Instructions
Dice the onion and chop the tomato and pepper up into small pieces.
Heat oil in a saucepan, and add in the onion & bayleaf, cooking until the onion softens slightly.
Add bell pepper and 2-3 minutes, with a squeeze of tomato paste and a splash of water to combine, on a medium heat.
Add rice in, along with the tomato, fold in and cook for a minute or two to combine all flavours.
Add in stock water, salt and pepper, bring to a boil, lower to medium-low, cover and simmer for 10-15 minutes.
Once rice is cooked, allow to rest for 10 minutes before serving to solidify – Serve and enjoy with your favourites!
